Potatoes and green beans with chantilly

Ingredients
- 600g peeled and cubed potatoes
- 350g green beans (or sugar snap)
- 125ml whipping cream
- 200g mayonnaise (low fat works)
- 1sp lemon juice
Directions
- Boil the potatoes in salted water till tender (~25 mins).
- While potatoes are cooking, whisk together mayonnaise, cream and lemon juice, seasoning to taste.
- Place the mayo-cream mix into a siphon, and charge with a cartridge, then place in fridge till later.
- Bring a second pan of salted water and the beans for 4 mins.
- Drain both potatoes and beans.
- Place potatoes, then beans in each bowl.
- Use the siphon to dispense the cream on top.
